Job Summary

The Head Butcher prepares meat orders for all locations on a daily basis, while supervising and delegating duties to Meat Cutter and Butcher’s Assistant.  The Head Butcher is responsible to ensure all aspects of the work area are kept in a neat, clean and orderly condition, according to federal health policies and standards. This position is additionally responsible for: the supervision of staff, performing of monthly inventories, ordering of supplies and ensuring that all butcher shop requisitions are completed daily, including listing accurate weights, and conducting NPS, Brand Standard and Internal Audits. The Head Butcher oversees a team of 2 and is responsible to monitor employee clock in and clock out, and additionally assists in oversight of Employee Dining Room.

  • Starting Wage: $51,000

 

The “must haves” for this position include

  • 1 year sous chef experience required – Meat Fabrication
  • Valid US driver’s license/Successful completion MVR
  • Capable of handling moderately strenuous activity
  • Must have good organizational skills and possess initiative

 

We prefer that you additionally have the following skills / experience, but it is not required

  • Multi Outlet resort experience
  • Meat Fabrication certificates
  • Knowledge of different kinds of meat, seafood, smoking, brining techniques
  • High volume meat fabrication
  • Be genuinely concerned about the environment and recycling
  • Have good communication/people skills

This is a summer position. Our season typically runs from May through early October. Candidates must be available to work until the end of the season.
